The genus includes five domesticated edible species—Cucurbita argyrosperma, C. ficifolia, C. maxima, C. moschata, and C. pepo—which are grown worldwide for their flesh and seeds and are variously known as squash, pumpkin, or gourd. Cucurbita species are important as a food source, providing nutrients such as vitamin A and vitamin C, and are used in a wide range of culinary preparations including pies, soups, and desserts.

The fruit is a pepo, a type of berry with a thick rind and fleshy interior. Seeds are large, flat, and attached to the ovary wall. Fruit size ranges from wild specimens as small as 4 centimeters to domesticated specimens weighing over 300 kilograms; the current world record is 1,054 kg. Many North and Central American species are pollinated by specialist bees in the genera Peponapis and Xenoglossa, though honey bees also visit.
